Bunmeido was founded by Yasugoro Nakagawa in the town of Maruyama, Nagasaki Prefecture in 1900. Later, his younger brother Jinzaemon Miyazaki opened its shop in Tokyo. The first one is Specially selected Gosan Castilla (meaning “five-three castilla”) featuring the deep, rich flavor of egg yolk.

It was named after the fact that the ratio of egg yolk and white is 5:3 as “go” is “five” and “san” is “three” in Japanese. The castilla has a deep and rich flavor of egg yolk as it contains a higher amount of egg yolk than normal castilla. It also has a moist, smooth texture from keeping the amount of flour to the minimum. Moreover, the Wasanbon sugar made in Tokushima Prefecture and the linden honey produced in Hokkaido draw out the rich flavor of eggs even further, and the coarse sugar gives it a nice, moist texture.
